02 — The presentation ritual
JUNIQUE begins with one unmistakable voice — wild juniper from the limestone Kras. Selected spices complete the recipe, but a distinctive process keeps them in support, allowing juniper to shape roughly 90% of the flavour.
Every botanical can pull focus. We made the others step back and left one berry standing in the open.
Juniper is the defining ingredient of gin — yet in many recipes its character is softened by coriander, citrus and other botanicals.
JUNIQUE takes a different path. Carefully selected spices remain in the recipe, but our distinctive process places them behind the berry, not beside it. The result is approximately 90% juniper-led in flavour: resinous, sharp and mineral.
It is a harder spirit to make. The supporting botanicals create depth, but there is nowhere for an average juniper berry to hide.
Wild juniper hand-picked from the Kras plateau, where the bora wind concentrates resin in the berry rather than letting it grow soft.
A carefully controlled maceration gives each botanical its precise role, while drawing exceptional depth and intensity from the juniper.
A distinctive copper-still process is tuned to let juniper rise far above the supporting spices. The cut is made by taste and tended by hand, not by a clock on the wall.
Settles undisturbed in glass until the distiller says it's ready — never released early to meet a release date.
Numbered by hand, in batches small enough that one person can taste every bottle before it leaves the room.
Crushed pine resin and cracked pepper, lifted by something cold — like limestone after rain. No citrus perfume to soften the approach.
Juniper arrives at full strength: sharp, resinous and dry. Supporting spices add depth and structure without competing for attention.
A long, dry finish with a trace of wind-scoured stone — the plateau itself, still there after the glass is empty.
